With so many good things happening at Buck Hill this year, it was only natural that their onsite restaurant, Tucker’s Bar & Restaurant would get an overhaul too. Enter renowned chef, caterer, and owner of Las Tortillas Mexican Restaurant in Rosemount, Ryan McGunnigle and his wife, Jen. With some new décor and an entirely new (and unique) menu, Black Diamond Restaurant at Buck Hill is now serving up fresh scratch-made Mexican American cuisine and specialty cocktails daily, and best of all, you don’t have to be a skier to enjoy it. Read on to learn more about one of Burnsville’s newest restaurants from the owner himself, Ryan McGunnigle!

1. How did the idea for an overhaul of Tucker’s at Buck Hill come to be?

Buck Hill’s new ownership wanted a restaurant to operate with enhanced amenities and guest experience for all twelve months of the year. We also overhauled and upgraded the 200 seat Event Center to attract weddings and other summer gatherings.

2. How did you become involved in the project?

My wife, Jen, and I were approached by the new owners of Buck Hill, Chip and Dave Solner, at our Las Tortillas Mexican Restaurant in Rosemount. They have dined with us many times at our restaurant and also knew of our catering services. They wanted similar offerings of cuisine and beverages at Buck Hill.

3. What about the restaurant itself? What can people expect when they walk through the doors?

Black Diamond is a full-service restaurant open seven days a week at 11:00 am for Lunch followed by weekday Happy Hour and daily Dinner service. The decor is ski and snowboard themed with high ceilings, fireplace, large windows and long deck at the base of the ski slopes…comfy and inviting.

4. What kind of food can people find on the menu? What was the motivation behind this influence?

Black Diamond offers both Mexican and American cuisines. We use traditional regional ingredients and integrate a Mexican flare with American comfort food. Our sister restaurant, Las Tortillas, was the Mexican influence and the American influence is from the many young families that visit Buck Hill each year.

5. Let’s talk about the bar? Is it a full bar? What kinds of brews, wines, and cocktails will people find?

We offer a full bar with bottled beer, rotating draft beer specialties, signature cocktails and quality varietals of Domestic and Imported wine. We feature scratch-made margaritas and signature cocktails.

6. What are some of the people’s favorite menu items or specialty cocktails so far?

Grilled Carne Asada tacos, Salmon salad, homemade Tamales, and our BBQ Pork nachos are the most popular food selections. Surly Furious, Patron margaritas, homemade Sangria, and the Pyrat Punch cocktail are the top-selling beverages.

7. Any seasonal drinks or food available during the holidays?

Our winter beverage additions are Avalanche Amber draft, PBR and Fat Tire Buckets of beer. Our new full-size lunch and dinner menus include chili, soups, pizza and more Mexican flare.

8. Can people find events or live music at the restaurant?

Both our Facebook page and Buck Hill’s website (see addresses below) will promote upcoming events and soon to offer live music. We are currently looking for talented musicians to entertain our guests!
